For those of you who didn’t know, several of doTERRA’s essential oils can be used to enhance the flavor of many foods, including soup. Last year I talked about how I made my homemade Chicken Tortilla soup and added a few oils into it, making it a hit with everyone I shared it with. I’ve also written about making Peppermint Brownies and adding in a few oils into smoothies and other drinks. But today I actually have a specific recipe to share if you happen to be a squash lover. ~ To make a delicious, healthy, homemade Roasted Butternut Squash Soup, you’ll need: 1/4 cup diced yellow onion, 1/4 cup diced celery, 1/4 cup diced carrot, 3 cups diced butternut squash, 2-3 cups vegetable stock, 1/2 cup almond milk, 1 teaspoon salt, 1/2 teaspoon black pepper, 2 drops Cardamom essential oil, and 2 drops Cinnamon essential oil. Roast the first 4 ingredients in a 350 degree oven until lightly browned, then transfer it to a saucepan. Add 2 cups vegetable stock, the almond milk, and the salt and pepper. Simmer the mixture until just starting to boil, then place it in a food processor or blender. Puree until smooth, add more stock if needed for a smooth, soupy texture, then add the essential oils and extra seasonings and a garnish if needed. Serve hot and enjoy! ~ People love this soup no matter what time of year it is and it’s a fast way to feed your family a yummy meal.
